Zucchini/Summer squash casserole.

Ingredients


1 1/2 T. unsalted butter divided
2T. olive oil
1 1/2 t. salt
1 t. black pepper
1t. minced garlic,  ( I add a bit more!)
2 lbs. summer squash, sliced in thin rounds
2 lbs. zucchini, sliced in thin rounds
1 t. fresh thyme, chopped
3 eggs
1/2 c. heavy cream
1 c. crushed butter crackers
1/2 c. parmesan cheese
