Zucchini Bread

  • 3 eggs

  • ¼ cup of oil – coconut is my preferred

  • ½ cup of sugar

  • 2 tsp of vanilla

  • 2 cups of grated raw zucchini unpeeled

  • 2 cups of flour

  • 3 tsp of soda

  • 1 tsp of salt

  • 2 tsp of cinnamon

  • 2 tsp of nutmeg

  • 1 cup of chopped pecans (optional)


Beat eggs, oil, sugar, and vanilla until light and think.  Fold in zucchini.  Sift together dry ingredients and fold into zucchini mix.  Add pecans.  Pour into buttered loaf pans and bake at 350 for one hour or until a tester comes out clean.
